...2.6...Over the Weekend...

...I just made a quick bowl of grits and added a handful of ham TVP...for a quick breakfast before shopping...haha...
...then I did the weekly shopping...I bought a lot of stuff this week...nothing special ...I stocked up on frozen veg...and we needed tomato paste...
...but the real deal this week was that HT had their store brand beans on sale for half price...so I bought a whole flat of them...just mixed and matched...all of the varieties that they had...for 44¢ each...

...and then I wanted to make half of Mom's Black Walnut Pound Cake...you know a two person version...but I'm not sure pound cake recipes halve very easily...here's the link to the original recipe...
...so for the eggs...I'm using one of my favorite egg replacers Aqua Faba...
...which I whipped up to stiff peaks...always so amazing and satisfying...
...then I also added 1/4 cup of applesauce...another good vegan egg replacer...
...jsut whipped that together...
...I got this bag of walnuts out of the freezer...there's a nice man in our community that grows them and shells them and gives me a big bag every year...so NICE!...
...I'm also going to add just a 1/4 teaspoon or so of this flavoring...it's not in Mom's recipe...
...and I'm going to use my old French White Corningware dish to bake it...it will make an 8 inch cake...my cake tins are 9 inch...and I thought this would be a better size...
...greased and floured...
...poured in the batter...
...and scatterd on a bunch of black walnuts...
...while it was baking I also baked some tofu...natch...
...and I meal prepped a little bit for next week...I made a pot of fluffy rice...I always use Julia's RIZ À LA VAPEUR method...and it's perfect every single time...
...and I made a big pot of green beans too...
...and then the cake was done...it seems perfect...
...so while the oven was still on...I made some vegan tofu ricotta...
...and used it to make a cute vegan lasagna...not traditionally layered though...I wrapped the noodles around the casserole...poured over the sauce...and filled the center with the vegan ricotta...
...and then I used one of the cans of garbanzos to make hummus...
...added lemon juice, tahini, garlic and salt...it's so creamy and delicious...and that was it for the food prep for the week...
...and we finished that pesky row of look alike trees too...YAY!...
...it was a fun puzzle...
...puzzles are so difficult to photograph...this one is pretty though...
