4 ounces cooked ham, choppedinto cubes
4 ounces sharp Cheddar,shredded
4 teaspoons Dijon mustard

Preheat the oven to 400F. Line a large baking sheet with parchment paper.
In a large microwave-safe bowl, add mozzarella, cream cheese, almond flour, and coconut flour. Microwave for 45 seconds, then stir. Microwave for an additional 15 seconds and stir until a smooth ball forms.
Add baking soda, vinegar, and egg. Stir until combined and a soft ball forms. Separate the dough into four pieces and flatten into 4" 6"rectangles. Wet your hands with a bit of water to prevent the dough from sticking to your hands as you work, repeating as needed.

Brush 1 teaspoon mustard over each pocket and sprinkle with poppy seeds and place onto prepared baking sheet.
