Breakfast Burrito Casserole

This was my favorite breakfast we made with company a few weeks ago.  It feeds a crowd with leftovers and the leftovers are every bit as good as fresh!  I made this on Don's birthday(3/23) thus the special birthday plate!



Breakfast Burrito Casserole

11 Flour Tortillas
12 large eggs
1/3 cup milk
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
2 pounds pork breakfast sausage 
8 ounces cream cheese
1 large onion finely diced
1 green bell pepper finely diced
1 red( or any color, we used yellow) bell pepper finely diced
16 + ounces cheddar cheese shredded

Preheat oven to 350 degrees Fahrenheit.

In a bowl whisk together eggs, milk, salt and pepper.

Heat 1 T butter in a large skillet over medium high heat and add diced onions and peppers. Cook for 5 minutes until softened and set aside.

In the same skillet with 1 T butter, add eggs and scramble until they are fully cooked but still slightly runny. Set eggs aside.

Wipe skillet clean and add the pork sausage, cooking over medium high heat until it is fully cooked.

Drain grease and add the sausage back to the pan along with the cream cheese. Continue to cook over medium heat, stirring constantly, until the cream cheese is completely melted. Set aside.

In a greased lasagna pan or large 9 x 13 casserole dish, place 4  Flour Tortillas in the bottom of the dish.
Spread half of the sausage mixture over the tortillas, followed by half of the eggs, half of the onions and peppers, and a good amount of the shredded cheese.

Place  4more tortillas in the dish and repeat the sausage, eggs, onions and peppers, and cheese.

Top with the remaining 3(we cut one in half) flour tortillas and sprinkle with remaining cheese.

Bake for 30 minutes or until the cheese is melted and the casserole is warmed through.
