Chicken and Vegetable Lasagna

Try this lasagne recipe! It can be prepared in under an hour :D

Ingredients

  • 1 Diced of each: Onion, tomato, Courgette, eggplant
  • 300 gr of Chicken Breasts cut into small cubes
  • 2 Cloves of Garlic chopped
  • 1 jar of Peeled Tomato Sauce
  • 1 Tsp of Honey
  • 2 Bay leaves
  • Béchamel sauce (Home-made or store bought)
  • 1 Box of Oven-Ready Lasagne
  • 25gr of grated Parmigiano Cheese

Spices

  • Salt and Black Pepper to taste
  • 2 Tsp Paprika
  • Half Tsp turmeric
  • 1 Tbsp Olive Oil
  • 1 bunch of parsley chopped
  • 1 Tsp of Thyme

Instructions

  1. Preheat the oven on 220°C
  2. In a large pan, heat olive oil then add onion and tomato. Cook for 3-4 min
  3. Add courgette, eggplant and garlic. Then drizzle salt, pepper, paprika, turmeric, thyme. Cook for 3 min
  4. Add the chicken. Let it cook for 5-6 min by stirring the mixture.
  5. Add the tomato sauce, honey and bay leaves. Cook for 3 min then put it aside
  6. In a large oven pan, pour in one ladle of Béchamel sauce
  7. Lay the lasagna sheets on top of the sauce to form the first layer
  8. Add more Béchamel sauce, then one ladle of chicken-vegetable sauce
  9. Repeat for 4 layers
  10. For the final layer, add both sauces and sprinkle with Parmigiano cheese
  11. Bake for 20 min until brown top

You can serve it with salad.
