You’ll find a terrific lineup of flavorful recipes, including chicken scampi, Mexican lasagna, fish tacos, and more in this week’s gluten-free meal plan. The desserts (chocolate pudding and carrot cake) are both amazingly delicious and sure to be winners with your family.
My summer CSA subscription started last week, and this week’s menu plan includes a few recipes for items that I received. I love that I’m supporting a local farm and getting a box of wonderful fresh produce each week. If you’ve never tried a CSA subscription, look for one in your area. Farms often deliver to a wide area, and you might be surprised to find that one has a drop off point near you.

Main Dish
Chicken Scampi – This chicken recipe is full of flavor from the onions, peppers, garlic, and Italian seasoning. Served over pasta, it is delicious and filling.
Mexican Lasagna – The picture does not do this recipe justice. I have made this Mexican lasagna many times over the years, and everyone loves it! There is no pasta in this dish, but it is like a lasagna because it is layered and uses ground beef, tomato sauce, and cheese. Strips of corn tortillas are used in place of pasta.
Ground Beef and Broccoli with Mushrooms and Ginger – Be sure to buy fresh ginger for this stove top recipe. It adds a lot of flavor to the dish.
Slow Cooker Pineapple Cinnamon Chicken – With only a few ingredients, this recipe is super easy and tasty. All you need are chicken pieces, honey, cinnamon, and a can of crushed pineapple!
Fish Tacos – If your family enjoys having tacos regularly (Taco Tuesday!), these fish tacos are a great way to mix things up.
Zucchini Crust Pizza – This is a low-carb pizza you’re sure to love! The crust contains zucchini, almond meal, egg, oil, and seasonings.
Side Dishes
Roasted Cauliflower – Pine nuts add a nutty flavor and crunch to this roasted cauliflower.
Honeyed Beets – I’m getting beets in my CSA box. I like to eat them raw in smoothies and beet salad, but this is a great way to eat them cooked.
Breakfast
Rhubarb Coffee Cake – I’ve also been getting rhubarb in my CSA box. If you’re a rhubarb fan like me, you’re sure to enjoy this coffee cake. Or try my strawberry rhubarb sauce for topping ice cream or angel food cake.
Healthy Carrot Muffins – Made with almond and coconut flours, carrots, and bananas, these paleo muffins are perfect for breakfast or snacking.
Dessert
Carrot Cake – This is an amazingly delicious cake! My family often requests it for birthdays.
Chocolate Avocado Pudding – This healthy dessert is easy to make and so delicious! I also like this recipe made with canned coconut milk instead of almond milk. I do have to add a little more sweetener with the coconut milk, though.
