This hearty, homemade hamburger soup is ready in about half an hour, making it ideal for busy weeknight meals. Perfectly seasoned ground beef, vegetables and tomatoes come together for an easy dinner that everyone will love.

Serve it with fresh-baked, warm beer bread, cornbread or cheese biscuits. Or make our cheesy pull apart bread — you won’t be disappointed.

Hamburger Soup:

Our family loves this hamburger soup recipe. It’s the perfect satisfying, homemade dinner for busy weeknights when you want a simple, filling meal made from scratch. (Try our creamy beef and shells, too!)

I’ve also heard it called poor man’s stew and bachelor stew. But, whatever you call it, you’ll love the delicious taste and how quick it’s ready!

Hamburger Soup Ingredients

You will need:

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion
  • 1 stalk celery
  • 2 cloves garlic
  • 2 medium potatoes
  • 5 cups beef broth
  • 15-oz can diced tomatoes
  • 8-oz can tomato sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 3 cups of frozen mixed vegetables (corn, green bean, carrot mix)

INGREDIENT Substitutions:

FROZEN VEGETABLES: I use frozen veggies for this soup, but you could also use fresh if you prefer. You could add mushrooms, cabbage, zucchini, squash, peppers, or beans, too! However, I do love how quick and easy the frozen vegetables are. 

ONION: I love sweet onions in this recipe, but you could also use white or yellow.

POTATOES: Russet potatoes are a great option for this recipe because they are nice and starchy. You could also use red potatoes. Some people substitute the potatoes for  rice, barley or with pasta such as elbow macaroni or egg noodles.

BROTH: You can use low-sodium broth if you would like to. I’ve also heard tips to substitute half beef broth and half chicken broth for a different flavor. I haven’t tried that, let me know if you do!

BEEF: You’ll definitely want to drain the excess grease off the hamburger after cooking. You can make this step easier by using lean ground beef. Or, you could use ground turkey or pork, if you’d prefer.

ADD-INS: Some folks like adding cream of mushroom soup to this recipe to make the broth creamy. Others have suggested adding half a teaspoon of yellow mustard — or onion soup mix — for an extra flavor! 

How to Make Hamburger Soup

STEPS FOR MAKING HAMBURGER SOUP

STEP ONE: In a medium-sized soup/stock pot brown ground beef, onion, celery, and garlic until no pink remains in the ground beef. Drain any excess fat.

STEP TWO: Add potatoes, broth, tomatoes, tomato sauce, Worcestershire, Italian seasoning, salt, and pepper and simmer for 10 minutes.

STEP THREE: Add the frozen vegetables.

STEP FOUR: Simmer 15-20 minutes or until potatoes are tender.

Storing your hamburger soup

IN THE FRIDGE: You can also keep leftovers of this recipe in the fridge for 3-5 days.

IN THE FREEZER:Once your hamburger soup is cooled, you can pour into a freezer-safe container and store for up to three months.

You could also freeze individual portions in freezer-safe bags or smaller containers to make it easy to reheat and serve for a quick lunch.
