Mashed Potatoes Quesadillas Recipe – Indian Style

A layer of Mashed Potatoes, swirled with Tomato Cilantro (Coriander) Chutney, layered between two Tortilla pieces, along with cheese blend, is all that makes these Quesadillas. The Tomato & Cilantro Chutney imparts the Indian-ish style to these Quesadillas. Easy to prepare, these are a great option for quick breakfast/snack, and even go well for lunch/dinner with a side of soup/salad sometimes!

 

I had recently shared the recipe for the Indian style Tomato Cilantro Chutney, and I have been trying to use the same in many different ways in my kitchen experiments. One of them which we all liked was the incorporation of that Chutney in the recipe of Mashed Potato Quesadillas.

When we talk about potatoes, it is a notorious vegetable, in a good way, LOL! If you see the Indian dishes especially, there are so many that use Potatoes (Aloo in Hindi) as one of the ingredients, in combination with some other veggie, like, Aloo Matar (with peas), Aloo Gobhi (with Cauliflower), Aloo Baigan (with Brinjal), Aloo Beans (with Beans) and so on, not to forget that it is used in stuffed Parathas as well. So, I have tried to incorporate something similar in the form of Quesadillas.

In this recipe, the boiled and mashed potatoes are combined with salt and some spices, along with the homemade Tomato Coriander Chutney, and this mixture is then layered between two pieces of Tortillas, along with some cheese, and toasted.

The Tomato Cilantro Chutney imparts a yummy flavor to the stuffing. But, if you have not made this Chutney, and you don’t have ingredients/time to prepare one, then I would suggest you can go ahead and use any tomato based sauce like Marinara or some other Pasta sauce. I am sure it would taste great with that as well.

I have used the Tortilla-Stuffing-Tortilla method to create a quesadilla. If you want to use a single tortilla and put the stuffing on half a piece, and then fold it and create a Quesadilla out of the single Tortilla piece, feel free to do that, just reduce the cheese and stuffing into half that we use here for a single quesadilla.

If you like to eat spicy food, I would suggest you to add green chilies in the stuffing or you can even add some Sriracha or any other Hot Sauce on the Tortilla layer. By adding an element of spice would definitely give you a better taste if you like eating spicy food. This one is a kid-friendly recipe, so the spice level has been set according to that.

I will be coming up with some more Quesadilla recipes in future. I love the fact that these are very easy to make, and you can modify the stuffings inside the Tortilla as per your taste.

We love taking Quesadillas when we go for picnic outings. I love the fact that these are Grab & Go kind of snack, and taste equally good when hot, or even when you pack them and eat them after sometime.

I always love to use a Mexican blend of cheese inside the Quesadillas, mostly I use the Mexican cheese blend from Trader Joe’s, even for this recipe I am using the same. But, as I always say, feel free to use whatever cheese you have available at hand.

Also, continuing the tradition, here comes my 26th recipe under My Julie & Julia Project. For those who don’t know, I had started this project last year, under which I had planned to post 100 recipes from my kitchen by the end of the year 2019. But since I got busy with other priorities in life, I have planned to continue the tradition in 2020. So, this is the Recipe #26 for you all.

Mashed Potatoes Quesadillas Recipe

Ingredients

  • Potatoes (Boiled) – 2-3 (medium sized)
  • Tortillas – 4 ( I use Large sized Tortillas here)
  • Tomato Cilantro Chutney – 3 Tbsp (Replace with Marinara/Pasta sauce if not available)
  • Onion (chopped) – 1-2 Tbsp
  • Red bell pepper (chopped) – 1-2 Tbsp
  • (Optional) Green chili (chopped) – 1 (To be added to mashed potato mixture for more spicy preference, I did not add any)
  • Salt – To Taste
  • Coriander Powder – 1/4 tsp
  • Italian seasoning – 1/4 tsp
  • Minced Garlic – 1/4 tsp
  • 21 Seasoning Salute – A pinch (I use the one from Trader Joe’s)
  • Black pepper powder – A pinch
  • Red chili flakes – A pinch
  • (Optional) Sriracha/Hot sauce – 1/2 Tbsp (As per spice preference, I did not use any hot sauce for my quesadillas)
  • Mexican Cheese Blend – 1 cup
  • (Optional) Oil/Butter – 1 tsp (For cooking the quesadillas in the pan, I have skipped using Oil/Butter in this recipe, but feel free to use)

Directions

  1. Peel the skin off the boiled potatoes and mash the peeled potatoes with a masher in a bowl.
  2. Add all the spices (Salt, Coriander powder, Italian seasoning, Minced garlic, 21 Salute seasoning, Black pepper powder and Red chili flakes).
  3. Now add the Tomato Cilantro Chutney to the bowl.
  4. Mix the mashed potatoes, spices and chutney to form a homogeneous mixture.
  5. (Optional) Add in the chopped green chili (This is for spicier potato mixture. I did not use any.)
  6. Add in the chopped onions and red bell peppers.
  7. Give everything a mix again and set it aside.
  8. Lightly cook one side of 2 tortillas in a pan, which will be used to form a quesadilla.
  9. On the cooked side of one of the tortillas, spread 1/2 tablespoon of Tomato Cilantro Chutney.
  10. Top it with 2 tablespoons of grated cheese blend.
  11. Now add a layer of half of the mashed potato mixture (If you think the mixture is a lot for one tortilla, you can reduce the quantity).
  12. (Optional) Spread 1/4 tablespoon of Sriracha or any hot sauce (Add quantity as per your spice level preference, I did not use any).
  13. Again top it with 2 tablespoons of grated cheese blend.
  14. Cover this with the other Tortilla, with non-toasted side on top.
  15. Carefully place the prepared Quesadilla on the non-stick pan and let it cook on both sides on low-medium heat, flipping carefully.
  16. Once both the sides are toasted properly, remove the Quesadilla to a plate and cut 4 pieces out of it carefully using a pizza cutter or a knife.
  17. Repeat the same process to prepare another Quesadilla of the remaining ingredients.
  18. Mashed Potato Quesadillas are ready. Serve them hot with a sauce/dip of your choice. This one goes best with sweet and sour sauce!
