Sausage Biscuit Casserole

I had lots of leftover biscuits from making biscuits and gravy while we had company.  I found this recipe and changed it up a bit.  We served it topped with sausage gravy AND syrup.  Some liked one, some like the other and some liked BOTH!  


Sausage Biscuit Casserole

12 Buttermilk Biscuits, baked
1 lb breakfast sausage
2 cups shredded cheddar cheese
10 eggs
2 cups milk
salt and pepper, to taste


Preheat oven to 350ºF. Lightly spray a 9x13-inch(Beth used a slightly larger, lasagna style) baking dish with cooking spray.

Chop each biscuit into 8 pieces. Place chopped biscuits in the bottom of the baking dish.

In a skillet over medium-high heat, cook sausage until no longer pink and crumbled. Drain fat.

Sprinkle sausage over biscuits. Top sausage with shredded cheddar cheese.

Whisk together eggs, milk, salt, and pepper. Pour over biscuit mixture.

Bake uncovered for 1 hour, or until eggs are set.

Serve with sausage gravy and or pancake syrup.
