Tropical Rice Pudding

This creamy, fruited rice pudding is one of my favorite comfort foods for when my sweet tooth needs satisfying. This recipe makes a pretty large batch so you can use it as a dessert for a big group, or breakfast for the week.
Ingredients:
Serves 6 - 8
  • 4 cups cooked brown rice
  • 2 cups pineapple, chopped into small pieces (I used frozen pineapple chunks)
  • 1/2 cup raisins
  • 1 1/2 cups warm or hot water
  • 1 cup raw cashews
  • 2 ripe bananas
  • The juice of 2 oranges
  • The zest of 1 orange
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
Directions:
  1. Preheat over to 350 degrees Fahrenheit
  2. Add rice, pineapple, and raisins to a casserole dish (I used a lasagna dish)
  3. Add remaining ingredients to a blender or food processor and blend until smooth
  4. Poor liquid into the casserole dish and stir everything together well
  5. Bake in the oven for 30 minutes
  6. Serve warm or cold – whatever your preference!
