Ingredients:
Serves 6 - 8
- 4 cups cooked brown rice
- 2 cups pineapple, chopped into small pieces (I used frozen pineapple chunks)
- 1/2 cup raisins
- 1 1/2 cups warm or hot water
- 1 cup raw cashews
- 2 ripe bananas
- The juice of 2 oranges
- The zest of 1 orange
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Directions:
- Preheat over to 350 degrees Fahrenheit
- Add rice, pineapple, and raisins to a casserole dish (I used a lasagna dish)
- Add remaining ingredients to a blender or food processor and blend until smooth
- Poor liquid into the casserole dish and stir everything together well
- Bake in the oven for 30 minutes
- Serve warm or cold – whatever your preference!
