On tonight’s edition of Trying New Recipies: Homemade Ricotta Cheese and Vegetable Lasagna

Spoiler alert- this vegetable lasagna (or anything with rutabaga in it) is not a recipe I think I’ll be making again, nor was it Joshlynn approved. Anyways, moving on.

Today was my first time ever making cheese. After being unsuccessful in finding goatmilk ricotta cheese at the store this week, I wanted to try to make it myself. Unfortunately, I wasn’t able to find goatmilk either. So I decided to make cows milk ricotta using A2 Whole milk (its supposed to be better for someone with a milk intolerance). 4 ingredients are all you need; Whole milk, salt, white vinegar, and fresh lemon juice.

The recipe, as written, calls for 1 gal of milk. I only purchased one carton that ended up being 59oz of milk, which is less than a half gallon. I adjusted the ingredients as closely as I could and gave it a try anyway.

I am pretty proud of my cheese and I’d make it again.

On to the Vegetable Lasagna-
If you like the taste of rutabaga, then this one has potential. If you’re like me, then I’d probably suggest you don’t try it. I knew better and did it anyways. I managed to get it down but it definitely wasn’t enjoyable and I won’t be sad if the leftovers get forgotten.

The recipe calls for 1 large sweet potato but didn’t give any other guidelines for what a large sweet potato is. I ended up using 2 of the “bigger” ones in the bag I bought and it definitely wasn’t enough. I also found that I had to add quite a bit of water to the “sauce” to get it to a thick tomato sauce consistency rather than tomato paste.

I did use my homemade ricotta cheese in this recipe instead of goatcheese ricotta or coconut milk yogurt. I also subbed the topping cheese for an Italian mixture of fresh grated cheese and likely used a whole cup instead of half. Shame on me! I probably put myself over calories for that one.
