Winter eats on the farm

Jon and I have been enjoying tag-teaming some elaborate meals lately: It turns something ridiculously labour intensive into a reasonable project. Today we made homemade lasagna from scratch, including the noodles! We had about 10 lbs of fresh tomatoes left that I wanted to use up.

Jon made a double batch of noodles, I made a gigantic pot of meat & tomato sauce, we ended up with two large and one medium lasagna – one to eat, one to share, and one to freeze! I don’t have a recipe to share here because I don’t use one, but here’s some tips:

-Lasagna is a good item for homemade noodles because you just need big sheets. We have a pasta roller, but I’ve made perfectly acceptable pasta sheets in the past with a rolling pin, too. I don’t reduce my sauce too much and they cook just fine in the dish – but budget at least an hour for baking time.
-I always put pepperoni on top of lasagna! (Mom’s tradition!)
-essential ingredients to make a fantastic tomato sauce: freshly ground fennel seeds, balsamic reduction, seeded & skinned tomatoes, plus local ground beef
-I used cottage cheese and fresh parmesan in the lasagna, and mozzarella on top

Nothing feels more satisfying to me than spending time cooking together!

Fresh Shoots and Sprouts!

Jon has been experimenting with growing some different greens this winter, so we’ve had kale, spinach, beet greens, lettuce, cilantro, plus pea, sunflower, radish, and broccoli shoots. I’ve also been doing some sprouting to supplement our diet of winter root veggies.
